Kids in the Kitchen Video: Making Watermelon Feta Salad


Here we are with my dad, niece, nephew and Maple (their dog) making our version of Watermelon Feta Arugula Salad, a recipe from Ina Garten on the Food Network.  I’ve voiced over their names in case any of you were wondering, although my octogenarian dad is still starring as himself. 😉  Hope your whole family will watch!!!


Watermelon is a rich source of lycopene and beta-carotene.  Choose the ones with a red flesh for the highest and most valuable nutrient content.  A watermelon cut into two inch cubes stores up to two days in the fridge without losing its nutrient value.  It may last a week, but don’t wait that long.  It’s also a rich source of vitamin C, potassium and magnesium.  For more about the great health and nutritional value of the watermelon, see  The World’s Healthiest Foods.
