Sweet Sticky Rice with Mango!!!

Sticky Rice with MangoI was looking for inspiration, and I found it!  Lately, I”m pretty secure with my own Thai cooking, so I don’t venture out to eat Thai much.  The only problem is that it’s sometimes more practical and economical to eat out when it’s just for yourself, and you don’t want to eat leftovers for three days in a row.  Anyhow, I did a three-mile walk two days in a row, so that was enough reason for me to celebrate!  I started out intending to visit Chipotle, a safe healthy tasty yet budget-conscious eat, but I saw the sign for Chada Thai Cuisine.  I had stopped at Chada for dinner many times in days of past after my evening retail management classes; I took those on the days my kids stayed with their dad as we shared custody.  That was a few years back.  Tonight, I went in and knew just what to order, the green curry chicken.  The hostess seemed to remember me, or I felt like she did the way she glanced knowingly and smiled a familiar lipsticky smile at me.  I asked for the chicken to be all white meat, and there was no extra charge for that.  My bowl of green curry chicken arrived with a small serving of steamed white rice, and it tasted absolutely perfect!  The zucchini was cut at a slant in nice-sized pieces (about one inch chunks) with serrated edges, so you could see and taste slivers of the dark green peel.  Here is a photo I found on the Internet that depicts what I mean by serrated edges.  

Nice presentation with the thinly sliced chicken and fresh basil leaves!  I was most impressed with the fact that the zucchini was not overcooked and had a slight crunch to it.  I wish I had taken a photo, since I am not able to find anything on the internet to accurately represent this dish in its simplicity and goodness.  The real star, here, though, is the Sweet Sticky Rice with Mango.  The hostess so nicely asked me if I’d like to order dessert that I couldn’t resist ordering what I’ll call my dad’s absolute favorite traditional Thai dessert!  It’s one that we usually get as a family, and everyone digs in so fast that it disappears in seconds.  I’ve never tried making it myself, but I’d love to try the next time I’m with family and mango is in season.  Here is a recipe I found on another blog called “SheSimmer” that looked authentic and easy to prepare.  Mango and Sweet Coconut Sticky Rice Recipe   It’s basically one part raw Thai sticky rice, one part good coconut milk, one part white sugar plus a pinch of salt for each 1/2 c. part.  That will make two servings by the way.  This sweet sticky rice complements sweet ripe sliced mango ever so well, and the crunch from the sesame seeds on top brings in this home run!!!  I would leave that piece of parsley garnish alone, though.  Well, I took the plunge and ordered the Sweet Sticky Rice with Mango dessert along with my traditional cup of hot water.  I love to order hot water!
